This careful breeding practice, the only one able to give us back almost lost tastes, is accompanied by the strict healthy controls conducted by Novissime to add safety to freshness.
TECHNICAL INFORMATION

"Le Ruspanti" are eggs produced in farms where hens are free to move in the open all the day round. The available ground for hens is mostly covered with plants and the chicken load does not exceed 4,000 per hectare, say 2.5 hens per square metre.
"A" CLASS EGGS
shell and cuticle: clean, normal, intact;
air chamber: not higher than 6 mm, immobile.
egg white: clear, limpid, jelly, free from foreign matters of any sort;
yolk: during candling it appears only a dark patch without apparent outline that does not move away from the egg centre when the same egg is rotated, free from foreign matters of any sort;
germ: imperceptible development;
odour: free from alien smells;
These characteristics are guaranteed up to the minimum recommended preservation expiry date
