TECHNICAL INFORMATION

Le Mattuttine are eggs where freshness is guaranteed by the laying date and collecting hour printed on the egg shell. The times of the various processing phases have been compressed to grant a prompt delivery and a real service to the consumer who will have extra-fresh eggs available for a longer time.
"A" CLASS EGGS
shell and cuticle: clean, normal, intact;
air chamber: not higher than 4 mm, immobile (this characteristic is guaranteed until the ninth day after laying);
egg white: clear, limpid, jelly, free from foreign matters of any sort;
yolk: at candling it appears only as a dark patch without apparent outline that does not move away from the egg centre when the same egg is rotated, free from foreign matters of any sort;
germ: imperceptible development;
odour: free from alien smells;
These characteristics are guaranteed up to the minimum recommended preservation expiry date
